Q1) Why does the iVend pay Apez Mann when it is paid by a customer?
A1) All payments made either in-world or online are processed by the Apez system external to the SL grid.
Hence, every payment is subsequently paid to the Apez.bank 'funds-holder' avatar Apez Mann so that the account of the merchant (creator) of the product can be credited.
After that, payments for resale commissions, revenue sharing and other payments are made.
If you are both the merchant (creator) and seller (vendor owner) the appropriate amount will have been credited to the Apez.bank account you've selected in the product collection settings (your Apez "working" account by default). We may introduce a 'direct-payment' feature in a future version that would keep the customer's payment in-world rather than pay it to an Apez avatar, but it will only be available if the iVend's functions are restricted (e.g. if the only products were from the vendor owner, there is no revenue sharing setup, etc.)
